Easter can be a challenging time for parents surrounded by chocolate and sweets. Many of them contain unhealthy food dyes, additives and LOADS of sugar.
Bright, cheerful and easily made with your kids using natural superfoods, give the chocolates a miss and include even the littlest of kiddos with this healthy alternative.

Superfood Healthy Easter Eggs
TIME: 10 minutes + 20 minutes refrigeration
1/4 cup coconut oil, melted
2 tablespoons almond milk or milk of choice
1 tablespoon of raw honey or rice malt syrup
2 cups Shredded Coconut
1/8-1/4 teaspoon of superfoods of choice.
Yellow: Ground Turmeric
Pink: Beetroot Powder
Green: Wheatgrass powder, Spirulina, Matcha* etc.
Option: Essential Oils, see notes
In your Vitamix or high-speed blender, add all ingredients in the order listed.
Pulse 8-10 times until mixtures holds together, scraping down the sides of the blender once if necessary.
Divide mixture evenly between 3 small bowls.
Colour each bowl with your superfoods of choice, using between 1/8-1/4 of a teaspoon per batch to reach the desired colour.
Mix well with a spoon or spatula until well incorporated and colourful.
Roll teaspoon size balls of mature into little ovals or desired shapes. (This is a great place for the kids to get hands-on!)
Refrigerate eggs for 20 minutes until firm.
Eggs will keep in an airtight container in the fridge for one week.
Note: Matcha contains caffeine and in a full serve quantity is not suitable for children. Given the small amount required it is safe to use here.
Other Colors ideas: Purple: Maqui or Acai Powder Orange: Baobab or Acerola Cherry powder.
